Spinach Salad with Beets and Goat Cheese
Ingredients:
- 1 to 2 cups peeled cubed beets
- Olive oil to drizzle on beets
- 6 cups spinach
- 4 ounces goat cheese
- 1 cup chopped walnuts
- Dressing:
- ¼ cup olive oil
- ¼ cup lemon juice
- 2 tablespoons Greek yogurt
- 1 tablespoon honey
- sea salt and black pepper to taste
Directions:
- Roast the beets drizzled with olive oil for 20-30 minutes at 400 or until fork tender.
- In a large serving bowl, add spinach, goat cheese and walnuts.
- Add beets to salad mixture.
- Combine all ingredients for the dressing in a separate bowl.
- Pour dressing over salad and serve immediately.
